Sicily is a rich and multicultural region, and of course this is reflected in its culinary tradition. The fertile soil, the mild climate and the presence of the sea made the Sicilians have a wide variety of products available; if you add a little imagination to this, you will get some dishes that will fit everyone’s palate.

Who does not know the arancini, cannoli, cassata, pasta alla norma or Sicilian pesto? The recipes are so many, but here we will expose you a particular one, loved by everyone: the Sicilian cannoli.


Sicilian cannoli


The Sicilian cannoli have become, in the common imagination, the emblem of Sicilian sweets. Born as carnival sweets, nowadays they are easy to find throughout the year, practically in all Italian pastries.

The recipe is not one of the simplest, but the results will be great!


For the waffles:

  • 250 gr of flour 00
  • 30 gr of sugar
  • 30 gr of lard
  • 1 whole egg and 1 egg yolk
  • 50 ml of marsala liqueur
  • 10 ml of vinegar
  • 1 orange peel
  • peanut oil

For the stuffing:

  • 800 gr of sheep’s ricotta
  • 300 gr of sugar

For the decoration:

  • icing sugar
  • candied fruit
  • chocolate chips
  • pistachios

Recipe preparation

For the waffles:

  • Sift the flour with cinnamon in a bowl. Add lard, sugar, grated orange peel and the whole egg.
  • Start mixing the ingredients by adding marsala liqueur and vinegar with a bit of salt.
  • Store the dough in the refrigerator for at least two hours.
  • Stir the dough and use 10 cm diameter molds to create the bases. stretch them a bit to form an oval.
  • Close the waffles by gluing them with the yolk and fry them in the oil for a few seconds until golden

For the stuffing:

  • Let the ricotta dry from its water and mix it with the sugar until you get a homogenous cream.


  • Now, fill the waffles with ricotta cream and decorate the ends with candied fruit, pistachios or chocolate, as you prefer!
